I had an amazing time at the Dievole wine resort for two days discovering the wines and activities surrounded by vineyards.
Resort and rooms
In the southern end of Chianti Classico near Siena and Castelnuovo Berardenga on top of an immaculate valley is Dievole Wine Resort.After one mile of cypress tree avenue is the reception and the ancient chapel.
The estate came to life in year 1090 and today there are 28 brand new rooms with amazing views on the vineyards, the Italian gardens and the ancient trees.The resort has been restructured in 2017 under the supervision of an Argentinian architect who collaborated with a bunch of very skillful Tuscan artisans. In some rooms the floor tiles are a made with very beautiful white terracotta. The bathrooms decorated with Carrara marble, while the curtains and lamps are all hand-made by a Florentine and Sienese “bottega”.
What to do
Dievole is primarily a winery with over 250 acres of vineyards. So it is possible to taste the Chianti Classico labels from Dievole and also from another four wineries which belong to the Dievole group:
Podere Brizio and Poggio Landi both producing Brunello di Montalcino and Tenuta Le Colonne e Podere Meraviglia produce a very special Super Tuscan from Bolgheri.
Extra-virgin olive oil experience Dievole has its own olive press and it is one of the most important high quality players in Tuscany.
Vineyard-Trekking and Mountain-bike tours Given the Amazing surrounding of this property, the Resort has created a bunch of really fun excursions on foot or by bicycle to explore and stay fit! There are 27 km of trails to discover by bike or foot. There is also horseback riding, gourmet picnic excursions and 2 swimming pools.
Dievole was known for producing very modern style extractive Reds. Since 2013 the new owners have been investing towards a different winemaking approach.
New vineyard management with organic production; no more international varieties but only the local Sangiovese, Cannaiolo and Colorino; a non interventionist approach to winemaking with wild yeast and no more barriques (small barrels) but rather very big non toasted oak vats and the use of cement bats for the fermentation. As a result the wines tend to show a better sense of place and a display of more focused fruit and character.
Chianti Classico 2015
With it’s very bright red ruby colour, the wine is already showing it’s crunchy sour cherry and cranberry notes. A super reactive mouthful with some violets and strawberries on the palate and a pretty mineral finish.
Chianti Classico Riserva 2014
This Riserva is the selection of the best grapes from three different vineyards which one day will possibly become single crus.
The wine is reflecting the rainy 2014 vintage with a relatively light body and a red berry crush aroma.
Some delicate earthy notes and a little bit of an astringent bite that screams for a pairing with some nice pork chops.
The savory finale though shows the potential and the quality of this terroir!
The restaurant is located in the main Villa in a very warm environment but it also has an perfect terrace guarded by two ancient trees overlooking the vines. The menu at first seems pretty ambitious with antipasti, pastas and second courses with plenty of choice: meat, vegetarian and even fish options. So I tried a few different ones and I was taken aback by the quality and simplicity of the execution. The very knowledgeable young director Andrea (with a great experience with Chef Gualtiero Marchesi) gets the meat from local butchers while the fresh fish is brought straight from the Tuscan coast every four days.

-Calamari and Porcini mushrooms salad
-Fagottini with venison
-Cinta Senese pork chops and roasted potatoes
Best wine pairing
Chianti Classico Riserva “900” 2014 and pork chops. Cinta Senese is the oldest pig breed in Europe and it can eat acorns and stay in the wild by law. So the meat is very tasty with a little more fat than a normal pork chop but no regrets as over 50% of this fat is Omega 3! The wine has a lot of sweet red fruit but still too much astringent tannic structure so the meat helps smoothing it out!
